Cowboy Caserole
Hearty, Cheesy, Meaty and Potentially Spicy...this low carb recipe is a super delicious meal that will leave you happy and content!
What's In it:
- 1.5 lb Lean Ground Beef
- 1 Red Bell Pepper (Seeded and Chopped)
- 1 Yellow Onion chopped
- 3 tbsp Spice Beast Power Mex Seasoning
- 2.5 Cups biscuit Mix
- 1 cup of water
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 4 oz can of diced green chilies (pick your brand and heat level)
- 1.5 cups Fiesta Blend shredded cheese
- 1 tsp Spice Beast Jacked Garlic & Onion
- 1 green onion (diced)
- 1/2 cup Salsa (pick your brand and heat level)
- dash Old Boney Mountain Grotto Dust
- Dash Spice Beast Beast Sauce (or your favorite hot sauce)
How to make it:
- Preheat Oven to 350
- Place ground beef in skillet and cook until it is no longer pink, draining the fat as you cook. (You can save time by working on step 3 while beef is cooking)
- Whisk your biscuit mix with water in a mixing bowl (time to get your hands dirty as mixing dough with your hands is extremely effective.)
- Spray casserole dish with cooking spray then line the dish with the dough. (Make sure you get all the way to the edges). Bake the dough for 5-8 minutes until its set or lightly golden. Leave oven on and set at 350
- Once beef is no longer pink, add the chopped onions, chopped bell pepper, Power Mex and optional dash of Grotto Dust to the skillet and cook/stir for approx 4 minutes. Remove from stove when cooked.
- Add the contents of the skillet to the casserole dish spreading evenly all the way to the edges.
- In a medium mixing bowl, combine sour cream, mayonnaise, drained green chilies, ¾ cup shredded cheese and Jacked Garlic & Onion. Mix well. Carefully spread sour cream mixture as a layer on top of the ground beef mixture.
- Add dollops of salsa randomly over the layer of sour cream (no need to spread) and add remaining shredded cheese over casserole
- Place in oven (which you left on), uncovered. Bake for 30 minutes until warm and bubbly.
- Before serving, sprinkle chopped green onion and dashes of hot sauce over casserole.
Pro tip: The casserole will hold its shape better when cutting if you let it cool a little before serving.
