Avocado and Egg Salad

Egg salad.

As a kid, my mother used to make this all the time. And as you may have read in past recipes or interviews, my mother (Love you Mom) was a pretty terrible cook. So needless to say, I wasn't a fan.

When I was in grade school she used to slip these egg salad sandwiches into my lunch box. Not being a fan, I'd try and trade them for something I liked. Well....nobody else liked egg salad either!

So I had three choices:

  1. Eat this chunky, creamy, mushy concoction of egg and mayonnaise smushed between two pieces of wonder bread
  2. Eat cafeteria food. (My moms cooking was bad....but not as bad as school lunches in the late 70's)
  3. Go hungry

So, if you haven't noticed, physically I do not look like someone that missed many meals. I ate the egg salad sandwiches!

Now that I'm older and between my taste buds evolving and my "culinary skills" I want to bring you a different version of the egg and mayo sandwich my mom snuck in my lunch box.

What's in it:

  • 3 Hard boiled eggs (chopped)
  • 3 Hard boiled egg whites (chopped)
  • 3 Small avocados (pitted and peeled)
  • 1.5 tbs of plain Greek yogurt
  • 1 tbs freshly squeezed lime juice
  • 1/3 tbs Dijon mustard
  • 1 tbs Spice Beast's The Garlic and the Glory
  • 1 tbs freshly chopped green onion (for garnish)
  • Lime wedges (for garnish)
  • Pinch of salt and pepper to taste (You can also use Spice Beast's Beast Prep)
  • ** Spice Beast's Why So Serious Sauce

 How to make it:

  1. In a large bowl add the eggs, avocado, yogurt, lime juice, Dijon mustard and garlic seasoning **See bottom**
  2. Mash with fork until desired consistency is found
  3. Season with salt and pepper to taste
  4. Garnish with chopped green onion and lime wedges

Why my mom couldn't make something this delicious is beyond my mental capacity to understand...although I don't remember the avocado being nearly as popular as it is now...LOL

I guess, I'll have to give mom a pass.

** For an added kick, add 1/4 tsp Spice Beast's Why So Serious Sauce
