Bacon Avocado Chicken Salad Wraps

Summer time, summer time, summer, summer, summer time....

Well as I am writing this recipe it is currently 95 degrees in NY!!!! So it would be safe to say.... Summer is here!

So here is a little low carb, keto friendly, high protein lunch recipe for everyone who loses their appetite when its hot....but knows that to maintain that summer physique, you must eat!!!

As my good friend Gabriella, owner of Custom Nutrition 4 U says....

"You can't be GR'EAT' if you don't EAT"



What's in it:

  • 1/2 cup of plain fat free Greek yogurt
  • 1/4 cup mayonnaise (feel free to use low fat mayonnaise if you like)
  • 2 tsp fresh lemon juice
  • 2 tbsp thinly sliced green onion
  • 1 tbsp minced parsley
  • 3 cups diced grilled chicken (cooled)
  • 6 slices bacon, cooked, chilled, chopped
  • 1.5 cups of grape tomatoes, halved
  • 1/2 cup diced celery
  • 1 medium avocado, diced
  • Romaine lettuce leaves (instead of bread or low carb wraps)
  • 1/2 tbsp Spice Beast Everything but the Carbs Seasoning
  • Pinch Spice Beast Beast Prep Pro to taste

How to Make it:

  1. In a medium mixing bowl mix and stir the Greek Yogurt, mayo, lemon juice, green onions, parsley while seasoning with the Everything but the Carbs
  2. Add Chicken, bacon tomatoes and celery to a large mixing bowl, add the dressing from the other bowl on top of the salad and toss to coat.
  3. Gently add the avocado and toss again
  4. Taste and see if you need to jazz it up with the Beast Prep
