Baked Tuscan Chicken Casserole

Another quick, low carb flavorful recipe that everyone will love!

 

What you will need:

  • 1 lb boneless, skinless chicken breasts
  • 1/2 lb fresh spinach, cleaned and chopped
  • 3 oz cream cheese, soft
  • 1/3 cup heavy cream
  • 6 tsp Spice Beast Master Blend seasoning
  • 1 tsp Spice Beast Beast Prep seasoning
  • 1/3 cup grated Parmigiano Reggiano
  • 8 oz jar sun-dried tomatoes, drained but save approx 1 tbsp of the olive oil fro the can/jar. Chopped
  • 3/4 cup mozzarella cheese, grated
  • 1 tbsp fresh parsley

How to make it:

  1. Preheat oven to 400 degrees
  2. In a bowl, mix together the cream cheese, spinach and heavy cream. Add Master Blend Seasoning and continue mixing. Add Parmigiano Reggiano and 1/2 the mozzarella cheese and continue mixing to combine
  3. Lay chicken breasts flat in the bottom of a large baking/casserole dish. Season the chicken with the Beast Prep. Spread the spinach and cream cheese mixture over them, top with the sun dried tomatoes. Finish by topping it all with the grated mozzarella cheese
  4. Bake for 35 minutes. Keep the dish loosely covered with foil for about 20 minutes then uncover and bake for about 15 minutes (make sure chicken is at 165 degrees)
  5. Serve immediately, you can serve over cauliflower rice, zucchini noodles, or just say to hell with it and serve over pasta !!
