Blackened Shrimp Lettuce Wraps

If you follow us on Instagram you will see story after story of me making blackened shrimp. This by far is one of my most favorite foods to make and eat. I love the flavor and the heat of blackening seasoning and I love shrimp.

Now you can use these shrimp in so many ways. You can add them to some yellow rice, you can make yourself a po'boy (LOVE THESE), you can add them as a side to ANY meal, or you can make a macro friendly dish like......

Ingredients:

  • 1 pound raw shrimp, peeled and de-veined
  • 1 tbsp BLACKOUT seasoning
  • 2 tbsp unsalted butter, divided
  • 1 cup plain 2% Greek yogurt
  • 6 oz avocado
  • 2 tbsp lime juice, divided (I prefer fresh squeezed lime)
  • 1 1/4 cups diced tomato
  • 1/4 cup diced green bell pepper
  • 1/4 cup chopped red onion
  • 1/4 chopped cilantro
  • 1 chopped and deseeded jalapeno pepper
  • 6 large romaine lettuce leaves
  • 1/2 tsp Beast Sauce

Directions

  1. Melt 1 tbsp butter and place in re-sealable plastic bag with shrimp and BLACKOUT seasoning. Shake contents to evenly coat the shrimp.
  2. Heat 1 tbsp of butter in large cast iron skillet, and add shrimp in a single layer. Cook on each side until the shrimp are pink and you see some crusting
  3. For the Avocado spread: Combine Greek yogurt, avocado, and one tbsp of lime juice in blender/food processor. Blend until smooth.
  4. For the tomato salsa: In a medium bowl, stir the tomatoes, green bell pepper, onion, cilantro, jalapeno pepper, and remaining lime juice.
  5. Prepare lettuce wraps by evenly distributing the shrimp, avocado spread and salsa into the romaine leaves.
  6. For some extra heat, add a few dashes of Beast Sauce!!! Serve immediately.
