Fig Balsamic Chicken Caprese with a Twist by: Tammy Torres

I met Tammy while she was teaching a kickboxing class at a local Sports Complex right here in Goshen NY. She is a hard woman to track down as she is constantly on the go, from teaching classes at Crunch Fitness, to competing on the stage and chasing after her adorable son....Tammy is an amazing person and an amazing cook. She is a certified IIN Health Coach and an Independent BeachBody Coach. I am grateful to call her a friend and thankful for her participation, hopefully we all learn something from Tammy and she educates us with some more of her delicious food!!!


All natural Chicken Breast
The Spice Beast Jacked Garlic & Onion
Dried Oregano
Dried Basil
Fig balsamic vinegar
Fresh basil leaves
Thinly sliced garlic
Fresh mozzarella, sliced thick
Campari tomatoes, sliced thick
Boars Head Prosciutto de Parma, sliced thin


Preheat oven to 425
Butterfly the chicken breast
Season with Jacked Garlic & Onion,  dried oregano, dried basil
Layer inside with garlic, fresh basil, mozzarella,  prosciutto, tomatoes,  more basil and garlic
Seal chicken breast with toothpicks 
Pan sear in EVOO
Place the chicken in an aluminum tray, cover and bake for 15 min

Drizzle with Fig Balsamic Vinegar and Enjoy!
