Gluten Free, High Protein Pizza Doughnut by: Tyler "Melee" Minton

Tyler is the founder of Ethos Nutrition and ex UFC fighter. He has also worked with the UFC's top fighters Daniel Cormier, Max Holloway and Megan Anderson

He started using Spice Beast with his meal prepping in 2018 and has incorporated it into his athletes training regimen. For a guy that got punched in the face for a living, his creativity is amazing and his meals are delicious.

Gluten Free High Protein Pizza Doughnut

 🍕🍩🤷🏼‍♂️ High Protein. Gluten Free. Indecisiveness Approved. Tyler “Melee” Minton

 Ingredients:

  • 1/3 cup Gluten Free All Purpose Flour
  • 1 1/2 tbsp Coconut Flour
  • 1/2 tbsp Baking Powder
  • 1/2 tbsp Spice Beast Viva Pizzeria or Hey Paesan
  • 2/3 cup Liquid Egg Whites
  • 1 cup Light Mozzarella Cheese (Shredded)
  • 1/2 cup Light Ricotta Cheese
  • 2/3 cup Pasta Sauce (your choice)

 

Directions:

  1. Combine half 1/2 cup Mozzarella and Ricotta in a microwave safe bowl
  2. Microwave for 45 seconds, place in mixing bowl
  3. Add liquid Egg Whites to bowl and mix
  4. Add Gluten Free all purpose Flour, Baking Powder, Coconut Powder and 1/2 tbsp of Spice Beast Viva Pizzeria to a bowl and mix
  5. Drop into Doughnut Pan  (use wet fingers to even out the molds)
  6. Bake for 9 minutes at 525 degrees and remove when golden
  7. (Optional Step) Pour sauce over doughnuts and spread *or* pour sauce into microwave safe bowl and heat for dipping
  8. Sprinkle remaining Mozzarella Cheese on top of doughnuts
  9. Broil for 2-3 Minutes until cheese bubbles
  10. Remove from doughnut pan and serve
