Huevos a la Mexicana

Eggs. Like the chicken that they come from, are inexpensive (well they used to be), packed with protein, and can be prepared in endless ways.

If you have seen me in person, doing my "sales pitch" you will always see me grab a bottle of Power Mex and say just one word.... EGGS

Depending on how much time you have or the ingredients on hand, you can use Power Mex seasoning with eggs anytime.

Let's cut the B.S. and get to the recipe shall we?

What you will need:

This recipe makes ONE serving... I double it for myself because...well... I'm a big boy LOL

  • 1 tsp Spice Beast Power Mex Pro Seasoning
  • 1 cup Petite Diced Tomatoes drained (Salsa)
  • 1 tsp Spice Beast Garlic Infused EVOO
  • 2 Whole large eggs
  • 4 Egg Whites
  • 1/3 cup Red bell pepper, diced
  • 1/3 Fresh Jalapeno pepper, diced
  • 1/3 cup White Onion, diced
  • 1/3 cup tomatoes, chopped (Eggs)
  • Dash of Spice Beast Beast Prep Pro to taste
  • 1 tsp Spice Beast Beast Sauce
  • Fresh Cilantro and Fresh Jalapeno Slices for garnish if desired

How to Make it:

First let's make the Salsa!

  1. Combine the cup of Petite Diced Tomatoes and 1/2 tsp of Power Mex in a small bowl. Season with salt and pepper is desired and set aside

Now the Eggs!

  1. Place eggs and egg whites in a large bowl, add the rest of the Power Mex and whisk until well mixed.
  2. In a skillet or non-stick frying pan, heat oil until sizzling.
  3. Add chopped onion and pepper and sauté for 1 minute
  4. Add diced Jalapeno and sauté with above for 1 minute
  5. Add the chopped tomato and sauté for 2 minutes
  6. (Yes this is a total of 4 minutes LOL)
  7. Add the whisked eggs to the pan with the vegetables
  8. Cook the mixture for about 2 minutes until they are lightly set
  9. Gently stir to mix all ingredients and fold egg mixture occasionally approx 4 min
  10. Place eggs on a plate, add a dash of Beast Prep to taste if desired
  11. Top with salsa, cilantro and jalapeno slices and a dash of Beast Sauce Serve hot.
