Paesan's Italian Stuffed Peppers

There is no easier meal prep dish than a stuffed pepper. You can basically stuff whatever you want in one and make it a meal! Since I'm Italian, let's let the Paesan's whip up a recipe for you.

Italian Stuffed Bell Peppers

What's In It: (You can scale this to size...more peppers...more ingredients)

  • 4 Bell Peppers (The larger the better LOL)
  • 2 lb Lean ground beef
  • 1 cup of diced zucchini
  • 1 cup of diced mushrooms
  • 1 cup of diced tomatoes
  • 1 tbsp of Spice Beast's Hey Paesan Seasoning (Substitute Viva Pizzeria or Master Blend. All depends on how crazy you wanna get)
  • 4 tbsp Parmesan cheese
  • Red pepper flakes (optional, can be added to mix or shaken on top)

How to Make It:

  1. Preheat oven to 350 degrees
  2. Wash and dry the peppers
  3. Cut the off the top of the pepper. Approx 1/2" to form a cup.
  4. Remove seeds and rinse
  5. Place peppers in baking dish. Cut side up (more peppers = bigger dish)
  6. In a large bowl combine the rest of the ingredients (except the Parmesan)
  7. Divide into equal parts and stuff into peppers (Red Pepper Flakes Optional)
  8. Sprinkle Parmesan over each pepper (and optional red pepper flake)
  9. Bake for 25-30 minutes, make sure meat is thoroughly cooked.
