Sweet & Smoky Shrimp

This dish is a quick, easy and absolutely delicious meal. You can serve it straight up or over rice or pasta, zucchini noodles or cauliflower risotto, or even a lettuce wrap with a side or guac.

How to prepare:

  1. In a medium skillet heat oil over high heat
  2. Add sliced scallions and saute for 2 minutes
  3. Add diced tomatoes, shrimp, seasoning and lime juice
  4. Stir until flavors blend and shrimp are heated to your liking
  5. Garnish with cilantro leaves and lime wedges
  6. Serve hot
