Tex Mex Tilapia with Mixed peppers
Looking for a quick prep time, low cost, low carb, low calorie meal? Well here is a delicious one!
Ingredients for Tilapia:
- 4-6 Tilapia fillets (Approx 2lbs)
- 1 tbsp Spice Beast Power Mex Pro
- 3 tbsp Fresh cilantro
- 1/4 cup Chicken Stock
- 1/16 tsp (just a pinch) Spice Beast Beast Prep Pro
How to make:
- Preheat oven to 350
- Spray baking dish with non-stick cooking spray (I use an EVO Sprayer)
- Add tilapia in a single layer to baking dish then lightly spray with cooking spray
- Season with Power Mex
- Sprinkle the fish with cilantro and Beast Prep
- Pour stock around the fish (do not pour directly on the fish)
- Bake 20-25 minutes until fish is opaque and flaky
- Plate with Mixed Peppers and serve
Ingredients for Mixed Peppers:** (Look below for a little added flair)
- 4 tsp Spice Beast Garlic Infused EVOO
- 1.5 cups Red Bell pepper (cored and sliced thin)
- 1.5 cups Green Bell pepper (cored and sliced thin)
- 1 cup Yellow or Orange Bell pepper (cored and sliced thin)
- 1/2 cup Yellow onion (peeled and sliced)
- 1/16 tsp (just a pinch) Spice Beast Beast Prep Pro
How to make:
- In a large frying pan, add oil and heat until sizzling
- Add peppers
- Sprinkle with Beast Prep
- Cook for 5-7 Minutes until tender
- Serve immediately
