Tomatocchini Appetizer
Simple, low carb, and delicious.
As you know I am all about quick and easy recipes but I am always big on flavor.
The Tomatocchini is just that tomato and zucchini with just a few additional ingredients. Why should delicious have to be complicated?
What you need:
- 2 large zucchinis
- 1 large ripe tomato, thinly sliced
- 2 tbsp olive oil
- Spice Beast's Beast Prep to taste (substitute salt & pepper)
- 1.5 tsp Spice Beast's Hey Paesan Seasoning
- 1 cup shredded mozzarella
How to Make it:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Slice zucchinis into 1/4-inch thick pieces. Brush with olive oil on both sides and place on the baking sheet.
- Sprinkle with Beast Prep and Italian seasoning on both sides.
- Top each zucchini slice with a thin tomato slice.
- Sprinkle shredded mozzarella cheese over the tomato slices.
- Bake for 12-15 minutes until the cheese is melted and lightly browned.
