Vegan Breakfast Mashup

Easy, Full of flavor and nutritious this breakfast mashup is easily one of our family favorites. The fourth in a series of recipes I’ve developed to showcase The Spice Beast spice blends, this dish begins with Beast Prep. These spice blends have simplified my cooking game so much that I’m often moved to look at the full lineup of blends to inspire my next recipe. Beast Prep features salt, garlic, onion, black pepper and green pea protein powder. Yes, you read that right, protein powder. This blend is also great on popcorn!


1 package fingerling heirloom potatoes diced
1/2 onion diced
2 small cubanelle peppers diced
4 cloves garlic minced
2 beyond meat sausages crumbled
2 tbl olive oil
1/2 tsp Beast Prep spice blend
Minced fresh spinach for garnish

In a large saucepan heat olive oil over medium heat and add potatoes toss to coat and let cook 5-10 min. Sprinkle with beast prep spice blend. Add onions and peppers and toss. Add 2-3tbl water and mix to aid potatoes in cooking. Cook another 5-10 min and add garlic. While the mixture is cooking in a separate small frying pan add the crumbled beyond meat sausage and heat over medium heat until browned. Taste the potato mixture to be sure potatoes are cooked through. Once potatoes are tender add the sausage and oils it has released into the potatoes and mix thoroughly. Garnish with minced spinach and serve hot.
