Venetian Stuffed Chicken Breast
Let's be real, Chicken is BORING.
You can pretty much do anything to it and it will taste better than just plain chicken.
Now stuffing a chicken breast with delicious flavors....that is a whole other level.
What You Will Need:
- 1.5 lb Boneless chicken breast
- 2 cups Diced Tomatoes, drained well
- 1/4 cup Sun dried tomatoes, chopped (dehydrated, not in oil)
- 1 tbsp Spice Beast Master Blend Seasoning
- 12 Large Black Olives (sliced)
- 3/4 cup roughly chopped spinach
- 1/2 cup shredded mozzarella
- 4 tbsp Parmesan cheese
- Pinch Spice Beast Beast Prep Pro
How to make it:
- Preheat oven to 350
- With a large sharp knife, carefully cut the chicken breasts like hot dog buns. Don't cut all the way through. This will create the "pocket"
- Combine remaining ingredients in a bowl and toss to mix (set a little of the Parmesan and the Beast Prep aside for step 7)
- Stuff each chicken breast with approx. 4 tablespoons of the mixture
- Place chicken breasts in a baking dish
- Pour remaining mixture over the chicken
- Top with remaining Parmesan and sprinkle a dash of Beast Prep
- Bake for 30-35 minutes, until chicken is fully cooked
