Zucchini Spaghetti and "Beastballs"
Let me start this recipe off with an apology.
Grandma (Rest in Peace), I am sorry for butchering this classic Italian dish that you so lovingly made for us every Sunday morning in my youth. Please don't punish me when we meet again, I'm just trying to keep my fans healthy and fit.
Ok now that I have made peace with Grandma, let's get to it!
This dish is low carb, low sodium and low calorie
So this recipe is lengthy because I am going to cover how to make this whole dish from scratch. Let's start with all the ingredients you will need:
Spaghetti:
- 2 Large fresh zucchini
- Electric Spiralizer, Handheld spiralizer, or Mandoline
- Don't have any of these tools? You can also use a Julienne Peeler
"BeastBalls":
- 1 1/4lb 90% Lean ground beef
- 1/2 tbsp Spice Beast Viva Pizzeria (Salt Free Seasoning)
- 1/2 tbsp Spice Beast Garlic and the Glory (Salt Free Seasoning)
- 1/4 tsp Spice Beast Beast Prep Pro (Optional)
"Beast Sauce":
- 2 tsp Scallions or chives, diced
- 4 cup Diced Tomatoes
- 1/2 tbsp Spice Beast Viva Pizzeria (Salt Free)
- 1/2 tbsp Spice Beast Garlic and the Glory (Salt Free)
- 1/4 tsp Spice Beast Beast Prep Pro (Optional)
- Non-stick cooking spray
How To Make:
"Beastballs":- Preheat oven to 350 degrees
- Combine all "beastball" ingredients into a bowl and hand mix
- Form 2 inch balls and place on cookie sheets
- Bake "beastballs" for 10-12 minutes, until done.
"Beast Sauce":
- Spray large frying pan with non-stick spray
- Saute scallions/chives over medium-high heat until done
- Add tomatoes and seasonings and stir until hot (approx 2 min)
- Toss in raw noodles and cook in sauce until done (2-4 min)
Plate and serve with your "Beastballs". Feel free to sprinkle a little crushed red pepper flakes and shredded Parmesan cheese.
